Dalgona coffee went viral in 2020, but its roots go back to South Korean dalgona candy and, before that, to Indian beaten coffee and Pakistani phitti hui coffee. Whatever you call it, the trick is the same: whip equal parts instant coffee, sugar, and hot water until they turn into a thick, glossy, caramel-colored foam, then spoon it over cold or hot milk.

Ingredients

  • 2 tbsp instant coffee
  • 2 tbsp sugar
  • 2 tbsp hot water
  • 8 oz cold or hot milk, plus ice if serving cold

Step-by-step

  1. Combine the instant coffee, sugar, and hot water in a bowl.
  2. Whip with a hand mixer or whisk for 2–4 minutes until thick, glossy, and caramel-colored — it should hold soft peaks.
  3. Fill a glass with ice and cold milk (or hot milk for a warm version).
  4. Spoon the whipped coffee on top.
  5. Stir before drinking to blend the foam and milk.

Tips for the best cup

  • Instant coffee is essential — regular grounds won't whip up.
  • A hand mixer is far easier than whisking by hand; an electric whisk takes 2 minutes.
  • The sugar helps stabilize the foam; reducing it makes the foam weep faster.

Key takeaways

  • Dalgona is equal parts instant coffee, sugar, and hot water, whipped stiff.
  • Spoon the foam over milk and stir to drink.
  • Instant coffee and sugar are what make the foam hold.
