The cinnamon dolce latte is a cozy, spiced latte built on a cinnamon-brown sugar syrup. It tastes like a warm sweater on a cold morning — sweet but not sugary, with cinnamon doing the heavy lifting. It's easy to make the syrup ahead and keep it on hand for instant cinnamon lattes all week.

Ingredients

  • 2 shots of espresso
  • 1.5 tbsp cinnamon dolce syrup (see below) or cinnamon syrup
  • 8 oz whole milk
  • A pinch of cinnamon for the top

Cinnamon dolce syrup: simmer 1 cup water, 1 cup brown sugar, and 2 cinnamon sticks (or 1 tsp ground cinnamon) for 10 minutes, then strain.

Step-by-step

  1. Add the cinnamon dolce syrup to a 12 oz cup.
  2. Pull two shots of espresso over the syrup and stir to combine.
  3. Steam the milk to glossy microfoam.
  4. Pour the milk into the cup, blending with the spiced espresso base.
  5. Dust the foam with a pinch of cinnamon.

Tips for the best cup

  • Make a batch of syrup and store it in the fridge for up to two weeks.
  • Brown sugar gives a deeper, molasses-like sweetness than white.
  • A tiny pinch of nutmeg alongside the cinnamon adds complexity.

Key takeaways

  • A cinnamon dolce latte is built on cinnamon-brown sugar syrup.
  • The syrup can be made ahead and kept for quick lattes.
  • Brown sugar and cinnamon are the flavor backbone.
